- 600ml double cream
- 397g can condensed milk
- 3 tbsp honey
- 2 limes, zested
- Juice of 3 limes
- 60ml gin

- Extra lime zest (from 1 lime)
Instructions
- Whip the cream: Using a mixer or whisk, whip the double cream until it just begins to thicken and forms soft peaks. Be careful not to overwhip, as the cream should remain light and airy.
- Combine ingredients: Gently fold in the condensed milk, honey, most of the lime zest (reserving some for garnish), all the lime juice, and the gin into the whipped cream. Mix lightly to incorporate all ingredients evenly without deflating the cream.
- Freeze the mixture: Pour the combined mixture into a shallow, freezer-safe container. Cover it and place it in the freezer. Allow it to freeze until firm, which typically takes about 3 to 4 hours, but for best results freeze overnight. There is no need to stir during freezing since the gin prevents the ice cream from freezing solid.
- Prepare to serve: Remove the ice cream from the freezer about 10 minutes before serving to allow it to soften slightly for easier scooping.
- Garnish and enjoy: Top the ice cream with the remaining lime zest and fresh raspberries. Serve immediately and enjoy a vibrant, creamy dessert.
