  • 1/4 cup Unsalted Butter

Icing

  • 2 ounces Cream Cheese

  • 1/2 teaspoon Pure Vanilla Extract
  • 2 tablespoons Unsalted Butter

Instructions

  1. Prepare homemade proofer: Preheat the oven to 200°F (90°C) and place a pan of water at the bottom to create a warm, humid environment. Let it warm for 5 minutes, then turn the oven off.
  2. Grease baking dish: Lightly grease a 13×9 inch baking dish and set aside for later.
  3. Mix dry dough ingredients: In a large mixing bowl, combine 3 cups of all-purpose flour, 1/4 cup Truvia sweetener, 1 teaspoon salt, and 2 packets instant dry yeast. Mix on low speed for 1-2 minutes to blend.
  4. Warm milk and butter: In a microwave-safe bowl, heat the whole milk and 1/4 cup unsalted butter for 30-40 seconds until warm (120-130°F or 50°C).
  5. Combine liquids and dry mix: Pour half of the warm milk-butter mixture into the dry ingredients and mix on low.
  6. Add egg and remaining liquids: Incorporate the egg, then add the remaining milk-butter mixture. Mix on low speed until the dough is moist.
  7. Mix dough thoroughly: Increase the mixer speed to medium and mix the dough for 3 minutes to develop gluten.
  8. Add more flour: Lower mixer speed and add 1/4 cup more flour; mix until fully combined.
  9. Knead dough: Turn the dough out onto a surface lightly dusted with 1/2 cup flour and knead for 8-10 minutes until the dough is smooth and no flour remains.
  10. Initial dough rest: Place the kneaded dough in a greased bowl and let rest for 10 minutes to hydrate the yeast properly.
  11. Prepare cinnamon filling: While dough rests, mix 1 tablespoon ground cinnamon with 1/2 cup Truvia sweetener in a bowl and set aside.
  12. Roll out dough: Roll the dough into a roughly 14×8 inch rectangle, flipping and shaping it carefully for evenness.
  13. Spread butter and sprinkle cinnamon sugar: Evenly spread 1/4 cup softened butter over the rectangle, then sprinkle the cinnamon-sweetener mixture evenly on top.
  14. Roll dough log: Tightly roll the dough lengthwise into a 14-inch log shape.
  15. Slice rolls: Cut the log into 14 equal pieces and place them in the prepared greased baking dish.
  16. Second rise: Cover the rolls with plastic wrap and place the pan inside the homemade proofer for 60-90 minutes or until the rolls double in size.
  17. Preheat oven: Remove the rolls from the proofer. Preheat your oven to 375°F (180°C).
  18. Bake rolls: Bake the rolls for 18-20 minutes or until the edges turn golden brown and the crust is set.
  19. Cool rolls: Transfer the cinnamon rolls to a wire rack and allow them to cool completely before icing.
  20. Prepare icing: In a small bowl, whisk together 2 oz cream cheese, 1/3 cup Truvia confectioners sweetener, 1/2 teaspoon vanilla extract, and 2 tablespoons unsalted butter until smooth.
