- Mix Spices and Water: In a large bowl, combine the brown sugar, dried sage, salt, black pepper, garlic powder, dried thyme, cayenne, and cloves. Stir in the water until everything is evenly mixed.
- Add Ground Beef: Add the ground beef to the bowl and mix with your hands gently just until combined. Be careful not to overmix to keep the sausage tender.
- Shape Patties: Spread the beef mixture onto a baking sheet or large plate in a layer about 1/2 inch thick. Use a round cookie cutter, glass, or jar approximately 2.5 to 3 inches in diameter to cut the mixture into individual sausage patties. Transfer the patties to a plate. Gather the leftover meat, spread it out again, and cut more patties until all the meat is used.
- Cook Patties: Heat a large skillet over medium-high heat. Add the sausage patties and cook for 3 to 4 minutes on the first side until well browned.
- Flip and Cook: Flip the patties and cook for an additional 3 to 4 minutes on the other side until browned and cooked through. Check the inside by cutting into a patty to ensure there is no pink remaining.
- Serve: Remove the patties from the skillet and serve immediately while hot.
