- 1 clove garlic
- 1 tbsp olive oil
- 1 tbsp parsley
Feta Appetizer:
- 1 cup cherry tomatoes, chopped
- 1 cup cucumber, chopped
- 1 1/2 cup baked potatoes, chopped
- 2 roasted red peppers
- 1/2 red onion, chopped
- 1 avocado, diced
- 3 cups lettuce, chopped
- 1 tbsp lemon juice (optional)
- Salt and pepper to taste
Salad:
Instructions
- Prepare Potatoes: Peel, cut, and boil potatoes for about 10 minutes. Bake at 350F/180C for 10-15 minutes.
- Prepare Salad: Wash and chop tomatoes, lettuce, cucumber, onion, and avocado. Combine in a large bowl.
- Make Feta Appetizer: Mash feta with garlic, olive oil, and parsley. Add to the bowl.
- Combine Ingredients: Once potatoes and peppers are done, let them cool before adding to the salad.
- Toss and Serve: Mix all ingredients well and enjoy!
