  • 3 tbsp feta cheese
  • 1 clove garlic
  • 1 tbsp olive oil
  • 1 tbsp parsley

    Salad:

  • 1 cup cherry tomatoes, chopped
  • 1 cup cucumber, chopped
  • 1 1/2 cup baked potatoes, chopped
  • 2 roasted red peppers
  • 1/2 red onion, chopped
  • 1 avocado, diced
  • 3 cups lettuce, chopped
  • 1 tbsp lemon juice (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare Potatoes: Peel, cut, and boil potatoes for about 10 minutes. Bake at 350F/180C for 10-15 minutes.
  2. Prepare Salad: Wash and chop tomatoes, lettuce, cucumber, onion, and avocado. Combine in a large bowl.
