- 2 Tablespoons brown sugar
- 2 Tablespoons melted butter
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Mix dry ingredients: In a large bowl, mix together the oats, flour, sugar, baking powder, baking soda, cinnamon, ground nutmeg, and salt.
- Combine wet ingredients: In a separate smaller bowl, whisk the egg, oil, and vanilla until well combined.
- Mix wet and dry ingredients: Pour the wet mixture into the bowl with the dry ingredients and stir until just combined.
- Add bananas: Fold in the mashed bananas into the batter until fully incorporated.
- Fill muffin tin: Divide the batter into a muffin tin.
- Prepare topping: Mix oats, cinnamon, brown sugar, and melted butter for topping.
- Top muffins: Sprinkle topping mixture over the muffin batter.
