  • Author: Noah
  • Total Time: 15 minutes
  • Yield: 4 servings 1x

Description

A delicious and hearty Grinder Salad combining classic Italian deli meats, fresh vegetables, and a tangy homemade dressing, perfect for a flavorful lunch or light dinner.

Ingredients

Scale

Dressing

  • 1/2 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 2 teaspoons minced garlic
  • 1 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup parmesan cheese

Salad

  • 16 ounces shredded iceberg lettuce (about 8 cups)
  • 4 ounces ham
  • 4 ounces pepperoni
  • 4 ounces salami
  • 4 ounces provolone cheese
  • 1 pint grape tomatoes (halved)
  • 1 cup croutons
  • 1/2 cup sliced pepperoncini peppers
  • 1/2 red onion (diced)

Instructions

  1. Make the Dressing: Whisk together mayonnaise, red wine vinegar, minced garlic, sugar, dried oregano, salt, black pepper, and parmesan cheese in a bowl until smooth. Set the dressing aside to allow flavors to meld.
  2. Prepare the Meats and Cheese: Slice the ham, pepperoni, and salami into 1/4 inch slices. Cut the provolone cheese into thin slices or small cubes to make them easy to combine in the salad.
  3. Assemble the Salad: In a large bowl, combine shredded iceberg lettuce with the sliced meats, provolone cheese, halved grape tomatoes, croutons, sliced pepperoncini peppers, and diced red onion.
  4. Toss with Dressing: If serving immediately, pour the prepared dressing over the salad and toss everything together gently until it’s evenly coated. If preparing ahead, keep the dressing separate and toss it with the salad just before serving to maintain freshness and crispness.

Notes

  • For a vegetarian option, omit the meats and increase the amount of cheese and vegetables.
  • You can substitute iceberg lettuce with romaine or mixed greens for extra flavor and nutrition.
  • Add olives or cucumbers for additional texture and taste variations.
  • Keep the dressing refrigerated and use within 2-3 days for best flavor.
  • Serve chilled for a refreshing and crisp experience.
