Ingredients

Scale

Sauce Ingredients

  • 1 ¾ cups chicken broth
  • ¼ cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard powder
  • 1 teaspoon honey
  • ½ chicken bouillon cube
  • ½ teaspoon onion powder
  • ½ teaspoon oregano
  • ½ teaspoon basil
  • ½ teaspoon parsley

Chicken

  • 2 large boneless skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 2 teaspoons parsley
  • 12 tablespoons olive oil

Additional Ingredients

  • ¾ cup dry white wine
  • 4 cloves garlic, minced
  • 3 tablespoons butter
  • 3 tablespoons flour
  • ½ cup freshly grated Parmesan cheese
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare Sauce Mixture: Combine chicken broth, heavy cream, Worcestershire sauce, mustard powder, honey, chicken bouillon cube, onion powder, oregano, basil, and parsley in a large measuring cup with a spout. Set aside.
  2. Slice and Pound Chicken: Slice each chicken breast in half lengthwise to create 2-3 thinner slices. Cover with saran wrap and pound with the textured side of a meat mallet until about ½ inch thick.
  3. Season Chicken: Season both sides of the chicken slices with salt, pepper, and 2 teaspoons of parsley evenly.
  4. Sear Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken slices in batches for 4-5 minutes per side until a golden crust forms. Remove and set aside.
  5. Deglaze Skillet with Wine and Garlic: Turn off heat briefly, then add the white wine to the skillet. Set heat back to medium and use a silicone spatula to scrape up the fond from the skillet bottom and sides. Bring to a gentle simmer and reduce wine for 2 minutes. Add minced garlic and cook for another 2-3 minutes until the liquid is reduced by half.
  6. Create Roux Base: Add butter and flour to the skillet and stir well to combine. Cook for 1-2 minutes to eliminate raw flour taste.
  7. Add Sauce Mixture: Gradually add the prepared sauce mixture in small splashes while stirring continuously. Bring to a boil then reduce heat to a simmer. Let sauce reduce and thicken for about 8 minutes.
  8. Incorporate Parmesan and Lemon: Lower heat to low and slowly sprinkle in grated Parmesan cheese, stirring constantly to melt and blend the cheese into the sauce smoothly. Stir in fresh lemon juice.
  9. Finish and Serve: Return the seared chicken to the skillet and spoon sauce over the chicken. Heat through for about 5 minutes or until the sauce reaches your desired thickness. Garnish with extra parsley. Serve alongside mashed potatoes and roasted vegetables of choice.

Notes

  • Use a dry white wine such as Sauvignon Blanc or Pinot Grigio for best flavor; avoid cooking wines.
  • Pounding the chicken to an even thickness ensures uniform cooking and juicy texture.
  • Be careful not to overcook the chicken during searing to maintain tenderness.
  • If desired, substitute chicken broth with low sodium broth to reduce salt content.
  • This sauce can be prepared ahead and reheated gently before adding chicken.
