Ingredients
Scale
Noodles
- 140g (5oz) dried ramen or noodle cakes (2 cakes)
Sauce
- 30g (2 tbsp) unsalted butter
- 6 cloves garlic, finely minced (about 2 tbsp)
- 2 tsp oyster sauce (or vegetarian oyster sauce)
- 2 tsp fish sauce (or soy sauce)
- 1 1/2 tsp Maggi seasoning (or soy sauce)
- 1/4 cup noodle cooking water (reserve from cooked noodles; add more if needed)
Toppings
- 1/4 cup finely grated parmesan cheese (freshly grated)
- 1/4 cup green onion, thinly sliced (about 1 stem)
Instructions
- Cook Noodles: Bring a large saucepan of water to a boil and cook the ramen or noodle cakes according to package directions. Reserve about 1/2 cup of the noodle cooking water before draining. Strain the noodles and set them aside.
- Prepare Sauce: In the same saucepan, melt the unsalted butter over medium heat. Add the finely minced garlic and sauté, stirring continuously until the garlic becomes soft and fragrant but not browned. Stir in the oyster sauce, fish sauce, Maggi seasoning, and 1/4 cup of the reserved noodle cooking water. Mix well to combine all the flavors.
- Toss Noodles: Return the cooked noodles to the saucepan with the sauce. Add the grated parmesan cheese and thinly sliced green onions. Toss thoroughly until the noodles are evenly coated and the sauce has been absorbed, ensuring there is no excess liquid pooling at the bottom. If the noodles seem dry, add additional cooking water one tablespoon at a time to loosen the sauce.
- Serve: Immediately plate the noodles while hot for the best texture and flavor.
- Serving Suggestion: For a more complete meal, serve with a fried egg on top and broccolini cooked alongside the noodles, tossed with Asian sesame dressing. To cook broccolini, boil it for about 3 minutes with the noodles, timing its addition to match the noodle cook time.
Notes
- You can substitute the dried ramen noodles with other similar dried noodles as desired.
- Fish sauce can be replaced with soy sauce for a vegetarian-friendly option.
- If you don’t have Maggi seasoning, soy sauce works well as a substitute.
- Reserve some noodle cooking water to help adjust the consistency of the sauce when tossing noodles.
- Freshly grated parmesan cheese adds a nutty, savory depth to the dish—pre-grated parmesan will not melt as smoothly.
- Adding broccolini and a fried egg can enhance the meal by adding greens and protein.
