Instructions
- Preheat and prepare vegetables: Heat the oven to 220°C (200°C fan)/gas mark 7. Place the sliced shallots, quartered mushrooms, and sliced garlic in a large baking tray. Drizzle with olive oil and season with salt and pepper, then toss everything together to coat evenly.
- Roast the vegetables: Spread the vegetables out evenly on the tray and roast in the oven for 12-15 minutes until they turn golden all over. Remove the tray from the oven and transfer the cooked vegetables along with any juices to a bowl. Stir in the finely chopped parsley.
- Assemble the flatbreads: Place the flatbreads on the baking tray. Spread each flatbread evenly with 2 tablespoons of béchamel sauce. Sprinkle grated mozzarella evenly over the sauce, then distribute the roasted mushroom mixture and sage leaves on top.
- Bake the flatbreads: Return the baking tray to the oven and cook the flatbreads for 6-8 minutes until the cheese is golden and melted and the edges of the flatbread turn crisp.
- Serve: Remove the flatbreads from the oven and cut into wedges. Serve warm with a green salad on the side for a light and flavorful meal.

- Use fresh sage leaves for the best flavor and texture. If unavailable, dried sage can be substituted but add less as it is more concentrated.
- Béchamel sauce can be homemade or store-bought, depending on your preference and time.
