  • 2 nests of vermicelli rice noodles

Flavour Base

  • 3 garlic cloves, crushed
  • thumb-sized piece of ginger, peeled and grated
  • 4 tsp lemongrass paste
  • 1 lime, zested and juiced, plus extra wedges to serve (optional)
  • 1 red chilli, deseeded and finely sliced

Vegetables

  • 2 medium carrots, coarsely grated
  • 8 spring onions, finely sliced
  • 200g swiss chard, finely sliced

Protein

  • 500g pork mince

Other

  • 2 tsp olive oil
  • 2 tsp fish sauce
  • ½ small bunch of coriander, roughly chopped

Instructions

  1. Prepare Noodles: Cook the vermicelli rice noodles according to the package instructions. Once cooked, drain and set aside to keep warm.
  2. Make Flavour Base: In a bowl, combine the crushed garlic, grated ginger, lemongrass paste, lime zest, and finely sliced red chilli. This mixture will infuse the dish with its aromatic character.
  3. Fry Flavour Base: Heat 2 teaspoons of olive oil in a large frying pan over medium-high heat. Add the flavour base mixture and fry for about 2 minutes until the ingredients begin to soften and release their aroma.
  4. Add Vegetables: Add the coarsely grated carrots and finely sliced spring onions to the pan. Stir-fry for an additional 2 minutes, stirring frequently to combine and soften the vegetables slightly.
  5. Cook Pork: Add the pork mince to the pan and cook for 3 minutes, breaking the meat up as it cooks, until it starts to brown and is nearly cooked through.
  6. Add Swiss Chard: Mix in the finely sliced swiss chard and cook for another 2 minutes until the pork is fully cooked and the swiss chard has wilted.
  7. Season and Finish: Drizzle in 2 teaspoons of fish sauce and the lime juice over the mixture. Scatter in the chopped coriander and cook everything together for 1 minute, stirring well to combine all the flavors.
  8. Toss with Noodles and Serve: Add the prepared vermicelli noodles to the pan, toss thoroughly to combine and heat through. Serve immediately, garnished with extra lime wedges if desired.

  • Ensure to deseed the red chilli if you prefer less heat.
