For the Flash-Fried Prawns

  • 2 tbsp extra-virgin olive oil
  • 300g large raw prawns, butterflied
  • 2 garlic cloves, thinly sliced or chopped
  • 1 tsp chilli flakes
  • Zest and juice of 1 lemon
  • 2 tbsp flat-leaf parsley, chopped

Instructions

  1. Prepare the prawns: Season the butterflied prawns lightly with salt and set them aside while you heat the oil.
  2. Cook the garlic: Heat 2 tablespoons of extra-virgin olive oil in a large frying pan over medium-low heat. Add the sliced or chopped garlic and cook gently until it just begins to turn golden and fragrant, taking care not to burn it.
  3. Flash-fry the prawns: Turn the heat up to high, then add the seasoned prawns and 1 teaspoon of chilli flakes to the pan. Stir and turn the prawns rapidly to cook evenly; this should take about 1 minute.
  4. Add lemon juice: Pour in the juice of one lemon and continue tossing and stirring the prawns until they become opaque and cooked through, approximately 1 more minute.
  5. Finish and serve: Remove the pan from heat. Sprinkle over the lemon zest and chopped flat-leaf parsley. Serve immediately with crusty bread to enjoy the flavorful sauce.
