Instructions

  1. Prepare Ingredients: Finely chop the carrots and slice the leek to ensure they cook evenly and blend well in the soup maker.
  2. Add Ingredients to Soup Maker: Pour in 750ml of vegetable or ham stock, then add 75g of red lentils, the chopped carrots, and sliced leek into the soup maker. Ensure the total quantity does not exceed the maximum fill line of your machine.
  3. Set Soup Maker Function: Select and press the ‘chunky soup’ function on your soup maker. The soup may appear foamy at the beginning, which is normal and will subside during the cooking process.
  4. Cook Soup: Allow the soup maker to complete its cycle, cooking the lentils until they are tender and the vegetables have softened.
  5. Season and Serve: Once the cycle finishes, check the lentils for tenderness and season the soup well with salt and pepper to taste. Finally, sprinkle chopped parsley over the top to serve.
