Fruit Salad:

  • 2/3 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • 1/3 cup brown sugar (packed)
  • 1/2 teaspoon grated orange zest
  • 1/2 teaspoon grated lemon zest
  • 1 teaspoon vanilla extract
  • 2 cups cubed fresh pineapple
  • 2 cups strawberries (hulled and quartered)
  • 3 kiwi fruit (peeled and sliced)
  • 6 ounces blackberries
  • 2 oranges (peeled and sectioned)
  • 1 cup seedless red grapes (halved)
  • 2 cups blueberries

Citrus Dressing:

  • Fruit Salad sauce (prepared in the instructions)

Instructions

  1. Citrus Dressing: Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium heat.
  2. 2. Reduce heat to medium-low, and simmer until slightly thickened, stirring occasionally, about 5 minutes.

  3. Prepare Fruit Salad: Remove from heat, and stir in vanilla extract. Set aside to cool.
  4. 4. Add the pineapple, strawberries, kiwi, blackberries, grapes, and blueberries to a large bowl.

    5. Pour the cooled sauce over the fruit. Toss to coat.

    6. Cover and refrigerate for 3-4 hours before serving.
