Black Bean Salad:

  • 1 1/2 cup black beans, canned, rinsed and drained
  • 1/2 red onion, chopped
  • 1 cup cherry tomatoes or 1 tomato, chopped
  • 2 roasted red peppers, chopped*
  • 2 tbsp green olives, chopped
  • 3 tbsp basil, thinly chopped
  • 3 tbsp parsley, thinly chopped
  • 1 avocado, diced
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • salt and pepper to taste

Instructions

  1. Wash and prepare all ingredients for the salad. Make sure to rinse and chop all the vegetables as needed.
  2. Add everything to a bowl. Combine the black beans, onion, tomatoes, roasted red peppers, olives, basil, parsley, avocado, garlic, lemon juice, olive oil, salt, and pepper in a mixing bowl.
  3. Toss well! Gently mix all the ingredients until well combined. Adjust seasoning if necessary.
