Black Bean Salad:
- 1 1/2 cup black beans, canned, rinsed and drained
- 1/2 red onion, chopped
- 1 cup cherry tomatoes or 1 tomato, chopped
- 2 roasted red peppers, chopped*
- 2 tbsp green olives, chopped
- 3 tbsp basil, thinly chopped
- 3 tbsp parsley, thinly chopped
- 1 avocado, diced
- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 1 tsp olive oil
- salt and pepper to taste
Instructions
- Wash and prepare all ingredients for the salad. Make sure to rinse and chop all the vegetables as needed.
- Add everything to a bowl. Combine the black beans, onion, tomatoes, roasted red peppers, olives, basil, parsley, avocado, garlic, lemon juice, olive oil, salt, and pepper in a mixing bowl.
- Toss well! Gently mix all the ingredients until well combined. Adjust seasoning if necessary.
