- 1 red onion, finely sliced
- 2 tbsp onion marmalade
- 500g pack duck leg confit
- 4 brioche burger buns
- 1 tbsp butter, at room temperature
- 1 tbsp Dijon mustard
- 80g bag rocket or frisée salad leaves
Instructions
- Prepare the onion marmalade: In a small saucepan, heat the olive oil over low heat. Add the finely sliced red onion and fry gently for 10-15 minutes until very soft. Stir in the onion marmalade and then remove from heat.
- Cook the duck confit: Follow the pack instructions to cook the duck leg confit. Once cooked, remove the duck meat from the bone and shred into thick pieces. Season the shredded duck to taste.
- Toast the brioche buns: Cut the brioche buns in half and spread the cut sides with butter. Place them butter-side down on a griddle pan over high heat for about 1 minute, until griddle lines appear and the buns are lightly toasted.
- Assemble the burgers: Spread Dijon mustard on one half of each toasted bun and onion marmalade on the other half. Fill the buns with shredded duck leg confit and a handful of rocket or frisée salad leaves. Serve immediately for the best flavor and texture.
