  • 500g pack duck leg confit
  • 4 brioche burger buns
  • 1 tbsp butter, at room temperature
  • 1 tbsp Dijon mustard
  • 80g bag rocket or frisée salad leaves

Instructions

  1. Prepare the onion marmalade: In a small saucepan, heat the olive oil over low heat. Add the finely sliced red onion and fry gently for 10-15 minutes until very soft. Stir in the onion marmalade and then remove from heat.
  2. Cook the duck confit: Follow the pack instructions to cook the duck leg confit. Once cooked, remove the duck meat from the bone and shred into thick pieces. Season the shredded duck to taste.
  3. Toast the brioche buns: Cut the brioche buns in half and spread the cut sides with butter. Place them butter-side down on a griddle pan over high heat for about 1 minute, until griddle lines appear and the buns are lightly toasted.
  4. Assemble the burgers: Spread Dijon mustard on one half of each toasted bun and onion marmalade on the other half. Fill the buns with shredded duck leg confit and a handful of rocket or frisée salad leaves. Serve immediately for the best flavor and texture.
