- 1 tsp celery salt (or 3/4 tsp salt)
- 1/4 tsp black pepper
- 1 tsp smoked paprika

- 1/8 tsp ginger powder
- 1/8 tsp cayenne pepper (or pure chilli powder)
- 1/8 tsp ground cardamom
Fish and Cooking
- 750g (1.5 lb) fish fillets, skinless, boneless (flathead recommended)
- 45g (3 tbsp) unsalted butter
- 30g (2 tbsp) extra unsalted butter for drizzling (optional)
Instructions
- Prepare the seasoning: In a bowl, combine celery salt, black pepper, smoked paprika, mustard powder, mace, allspice, ground clove, ginger powder, cayenne pepper, and ground cardamom. Mix thoroughly. This seasoning mix can be stored for months in an airtight container and is perfect for 750g of fish.
- Season the fish: Sprinkle the seasoning blend evenly on both sides of the fish fillets. Lightly rub to ensure the seasoning adheres well to the fish surface.
- Cook the first batch of fish: In a large non-stick skillet, melt 30g (2 tbsp) of unsalted butter over medium-high heat. Once foaming, place the seasoned fish fillets in the skillet. Cook each side until golden and cooked through, adjusting the time depending on thickness (approximately 3-4 minutes per side). Then remove the fish to a plate.
- Cook the remaining fish: Melt the remaining 15g (1 tbsp) of butter in the same skillet and cook the rest of the fish fillets using the same method until golden and cooked through.
- Rest the fish: After cooking, let the fish rest on the plate for 3 minutes. This allows the juices to redistribute for tender, moist fillets.
- Prepare extra butter sauce (optional): Add the optional extra 30g (2 tbsp) unsalted butter to the skillet over medium heat. Melt until it becomes foamy, then drizzle this buttery sauce over the rested fish when serving for enhanced richness and flavor.
