Dak Bulgogi (Korean BBQ Chicken) Recipe

  • Author: Noah
  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

Dak Bulgogi is a flavorful Korean BBQ chicken dish featuring tender boneless, skinless chicken thighs marinated in a savory and slightly sweet sauce made from soy sauce, lemon juice, brown sugar, honey, rice wine, garlic, ginger, and sesame oil. It’s quickly cooked in a skillet to achieve a perfectly caramelized exterior, delivering a delicious and authentic Korean taste at home.

Ingredients

Scale

Chicken

  • 1 pound Boneless, Skinless Chicken Thigh

Marinade

  • 3 tablespoons Soy Sauce
  • 1 Lemon (juice only)
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Honey
  • 1 tablespoon Rice Wine
  • 1 clove Garlic, minced
  • 1 teaspoon Fresh Ginger, grated
  • 1 tablespoon Sesame Oil
  • 1 pinch Ground Black Pepper
  • 1 teaspoon Sesame Seeds

Instructions

  1. Prepare the Chicken: Rinse 1 pound of boneless, skinless chicken thighs and trim off any excess fat. Cut each piece into approximately 2-inch long and 1-inch wide pieces to ensure even cooking and easy marinating.
  2. Make the Marinade: In a bowl, mix together 3 tablespoons soy sauce, juice of 1 lemon, 1 tablespoon brown sugar, 1 tablespoon honey, 1 tablespoon rice wine, 1 minced garlic clove, 1 teaspoon freshly grated ginger, 1 tablespoon sesame oil, a pinch of ground black pepper, and 1 teaspoon sesame seeds until well combined.
  3. Marinate the Chicken: Coat the chicken pieces thoroughly with the marinade. Cover and refrigerate for about 30 minutes to allow the flavors to penetrate the meat.
  4. Cook the Chicken: Preheat a skillet over medium-high heat. Place the marinated chicken pieces in the skillet, reserving the leftover marinade. Cook each side for about 2 minutes or until the chicken is cooked through and slightly caramelized. Because the sugar and honey can burn easily, watch carefully and add the reserved marinade by tablespoon increments if the pan gets dry. Lower the heat if you notice burning to achieve a nice glaze without charring.
  5. Serve: Serve the Dak Bulgogi warm, garnished with additional sesame seeds if desired. Enjoy as a main dish with rice or accompanying Korean sides.

Notes

  • Cutting the chicken into uniform pieces helps ensure even cooking and better marinade absorption.
  • Be careful with the heat when cooking, as the sugar and honey can burn quickly; adjusting heat and adding reserved marinade helps avoid burning.
  • For extra flavor, you can add sliced green onions or a sprinkle of toasted sesame seeds before serving.
  • This dish pairs well with steamed rice and kimchi for a classic Korean meal experience.
