  • Diet: Low Salt

Description

A vibrant and refreshing crunchy prawn and noodle salad combining tender rice noodles, fresh herbs, and zesty flavors from lime and chili. Easy to prepare and perfect as a light meal or side dish, this salad offers a delightful mix of textures and tastes highlighting Asian influences.

Ingredients

Scale

Salad

  • 100g rice noodles
  • 2 small carrots, cut into thin matchsticks
  • 2 spring onions, thinly sliced
  • Small handful each coriander and mint, chopped
  • 140g cooked prawns in chilli, lime and coriander (such as Waitrose brand)

Dressing

  • 2 tsp reduced-salt soy sauce
  • 1 tsp fish sauce
  • 2 tsp light soft brown sugar
  • Zest and juice of 1 lime

Instructions

  1. Prepare the noodles: Soak the rice noodles in boiling water according to the package instructions until tender. Drain the noodles and rinse under cold running water until completely cooled to stop further cooking, then drain thoroughly again.
  2. Combine salad ingredients: In a large bowl, mix the drained noodles with the thinly sliced carrots, spring onions, chopped coriander, mint, and the cooked chilli, lime, and coriander prawns to evenly distribute the ingredients.
  3. Make the dressing: In a small bowl, whisk together the reduced-salt soy sauce, fish sauce, light soft brown sugar, and the zest and juice of one lime until the sugar dissolves and the mixture is well combined.
  4. Toss salad with dressing: Pour the prepared dressing over the noodle and prawn mixture and toss thoroughly to coat all the ingredients evenly.
  5. Serve or store: Serve immediately for the freshest flavor or store in airtight containers in the refrigerator until ready to eat. The salad is best consumed within one day for optimal freshness and texture.

Notes

  • Ensure noodles are well drained to avoid sogginess in the salad.
  • Use cooked prawns to save preparation time and add a flavorful ready-made ingredient.
  • Adjust the amount of chili in the prawns or add fresh chili for extra heat if desired.
  • The salad can be prepared ahead but toss with the dressing just before serving to keep noodles crisp.
  • This salad is naturally gluten-free if you use gluten-free soy sauce alternatives.
