Ingredients
Scale
Chicken and Sauce
- 2 pounds chicken breasts or thighs
- 6 cloves garlic, chopped
- 1/2 cup tamari or soy sauce
- 1/4 cup organic ketchup
- 3 tablespoons honey
- 2–3 tablespoons chili paste
- 1 tablespoon rice vinegar
- Black pepper, to taste
Vegetables and Garnishes
- 3 cups broccoli florets
- 1/2 cup fresh chopped herbs (scallions and cilantro)
- Toasted sesame seeds, for serving
- Rice, for serving
Instructions
- Prepare Ingredients: Begin by chopping the garlic and washing the broccoli florets. If desired, cut the chicken into even pieces to ensure uniform cooking.
- Mix Sauce: In a medium bowl, stir together the tamari (or soy sauce), organic ketchup, honey, chili paste, rice vinegar, and black pepper until well blended to create the honey garlic sauce.
- Assemble in Crockpot: Place the chicken and chopped garlic into the slow cooker bowl. Pour the prepared sauce evenly over the chicken. Add the broccoli florets on top, ensuring they are distributed evenly.
- Cook Low or High: Cover the slow cooker. Cook on low heat for 3 to 4 hours or on high heat for 1 to 2 hours until the chicken is tender and fully cooked through.
- Thicken Sauce: Once the chicken is cooked, remove the lid and increase the heat setting of the slow cooker to high. Cook uncovered for an additional 25 minutes to reduce and thicken the sauce slightly.
- Serve: Spoon the chicken, broccoli, and thickened sauce over steamed rice. Garnish generously with fresh chopped scallions and cilantro, then sprinkle with toasted sesame seeds for added texture and flavor. Enjoy your meal!
Notes
- You can use either chicken breasts or thighs based on your preference; thighs tend to be juicier.
- If you prefer a spicier dish, increase the chili paste or add red pepper flakes.
- Ensure the broccoli is added early in the cooking process for slow cooker method to be tender but not mushy.
- The sauce thickening step is important to achieve a perfect glaze consistency.
- Serve immediately for best texture; leftovers can be refrigerated and reheated gently.
