Ingredients
Scale
Potato Mixture
- 2 pounds russet potatoes (About 4 large potatoes)
- 2 tablespoons unsalted butter
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Coating
- 1/2 cup all-purpose flour
- 1 cup breadcrumbs (Plain or panko)
For Frying
- 1/2 cup vegetable oil (plus more if needed)
For Garnish
- Fresh herbs to taste (such as parsley or chives)
Instructions
- Prepare the Potatoes: Peel the potatoes and cut them into large chunks. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over high heat.
- Cook the Potatoes: Once boiling, reduce the heat to medium and cook until the potatoes are fork-tender, about 15-20 minutes. Drain and return them to the pot.
- Mash and Season: Mash the potatoes with a potato masher or fork until smooth. Mix in the unsalted butter, milk, garlic powder, onion powder, salt, and black pepper. Allow the mixture to cool completely to ensure easier shaping.
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to keep the fries warm after frying.
- Shape the Fries: Once the mashed potato mixture has cooled, scoop out portions about the size of a golf ball and shape each into a fry or stick shape. Repeat with the remaining mixture.
- Prepare Coating Station: Arrange the flour on one plate and the breadcrumbs on another. Coat each potato fry first in the flour, then fully cover it with breadcrumbs to achieve a crisp crust.
- Fry the Potato Fries: Heat vegetable oil in a large skillet over medium heat. When the oil is hot, fry the coated mashed potato fries in batches for 3-4 minutes on each side or until golden brown and crispy.
- Keep Fries Warm: Transfer the fried potato fries to the parchment-lined baking sheet and place them in the preheated oven to keep warm while frying the remaining batches.
- Serve: Serve the crispy mashed potato fries hot, garnished with fresh herbs like parsley or chives for added flavor and color.
Notes
- The potato mixture must be completely cooled before shaping to prevent it from falling apart.
- Using panko breadcrumbs will yield a crunchier texture compared to regular breadcrumbs.
- If the fries are breaking apart when shaping, chilling the mixture in the refrigerator for 30 minutes can help firm them up.
- Adjust seasoning to taste; adding grated cheese to the potato mixture is a tasty optional variation.
- Drain fried fries on paper towels to absorb excess oil before placing in the oven.
- Leftover fries can be reheated in the oven to retain crispiness rather than microwaving.
