These Crispy Japanese-style chicken burgers feature tender marinated chicken thighs coated in cornflour and fried until perfectly crispy. Marinade and Sauce
- 1 tbsp mirin
- 3 garlic cloves, crushed
- 1 tbsp soy sauce
- thumb-sized piece ginger, peeled and finely grated
- 100g mayonnaise
Chicken
- 8 boneless, skinless chicken thighs, cut into strips
- 100g cornflour
- sunflower oil, for frying (approx. 2cm depth)
Assembly
- 4 large or 8 small soft burger rolls
- 2 Baby Gem lettuces, shredded
Instructions
- Prepare the marinade: Mix together the mirin, crushed garlic, soy sauce, and grated ginger in a bowl to create the marinade.
- Make the flavored mayonnaise: Take 1 tablespoon of the prepared marinade and mix it into the mayonnaise. Cover and chill this sauce until ready to serve.
- Marinate the chicken: Place the chicken strips in a large bowl and pour over the remaining marinade. Leave the chicken at room temperature for 10 minutes, or refrigerate for longer if desired to enhance flavor.
- Coat the chicken: Spread the cornflour evenly on a plate. Roll each piece of marinated chicken in the cornflour until fully coated to ensure a crispy texture when fried.
- Heat the oil: Pour sunflower oil into a large saucepan to about 2cm depth and heat over medium heat until hot but not smoking.
- Fry the chicken: Carefully add one-third of the coated chicken pieces to the hot oil. Fry for about 8 minutes, turning occasionally, until the chicken is crisp and cooked through. Remove and drain on kitchen paper to remove excess oil. Repeat with the remaining chicken in batches.
- Assemble the burgers: Slice the burger rolls open, layer with shredded Baby Gem lettuce, add the crispy chicken pieces, then spread with the ginger-soy mayonnaise. Serve immediately for best texture and flavor.

- You can marinate the chicken longer in the fridge for deeper flavor, up to 4 hours.
- Maintain the oil temperature to ensure the chicken cooks evenly without absorbing too much oil.
