- 4 skin-on chicken breasts

Instructions
- Prepare the chicken: Heat 1 tablespoon of olive oil in a deep frying pan over medium heat until shimmering. Lightly season the chicken breasts and place them skin-side down in the pan. Cook for 4-5 minutes until the skin is deeply golden, then turn them over and cook the other side until nearly cooked through. Remove chicken from the pan and set aside on a plate.
- Sauté the aromatics: Add the remaining tablespoon of olive oil to the pan. Add the finely chopped onion and cook for about 10 minutes until it begins to soften. Stir in the grated garlic and continue cooking for another 3 minutes to develop the flavors.
- Make the sauce: Stir in the Marmite until well combined. Pour in the low-salt chicken stock, then add the crème fraîche and finely grated parmesan. Mix everything well and bring the sauce to a gentle simmer on medium heat.
- Cook the chicken in the sauce: Return the chicken breasts to the pan, placing them skin-side up in the sauce. Simmer gently for 8-10 minutes or until the chicken is fully cooked through and tender.
- Prepare the vegetables: While the chicken simmers, cook the microwave vegetables following the package instructions.
- Finish and serve: Sprinkle the finely chopped chives over the chicken and sauce. Serve the creamy Marmite chicken hot, accompanied by the cooked vegetables and your choice of quinoa or mashed potatoes.
