Instructions
- Prepare Dry Ingredients: In a mixing bowl, combine the rolled oats, chopped cranberries, chopped pistachios, chia seeds (if using), and a pinch of salt. Mix well to ensure all dry ingredients are evenly distributed.
- Mix Wet Ingredients: In a separate bowl, add the nut butter, honey or maple syrup, and vanilla extract. Stir these together until the mixture is smooth and fully combined.
- Combine Mixtures: Pour the wet mixture into the bowl of dry ingredients. Mix thoroughly until all the oats, nuts, and cranberries are evenly coated and the mixture becomes sticky but manageable.
- Form Energy Bites: Using your hands, scoop approximately one tablespoon of the mixture and roll it into a ball shape. Place each ball on a baking sheet or a plate lined with parchment paper. Repeat until all mixture is used.
- Chill to Set: Refrigerate the energy bites for at least 30 minutes. This helps them firm up and hold their shape. Once set, store the bites in an airtight container in the refrigerator for up to one week.
Notes
- You can substitute nut butter with sunflower seed butter for a nut-free option.
