Description

A delicious and healthy side dish featuring roasted broccoli tossed with garlic, sliced almonds, and dried cranberries, bringing a perfect balance of savory and sweet flavors with a delightful crunch.

Ingredients

Scale

Vegetables

  • 1 pound Broccoli
  • 2 cloves Garlic

Dried Fruit and Nuts

  • 1/3 cup Dried Cranberries
  • 1/3 cup Sliced Almonds

Other Ingredients

  • 3 tablespoons Olive Oil
  • 1/2 teaspoon Kosher Salt
  • Ground Black Pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) to prepare for roasting the broccoli.
  2. Prepare Broccoli: Cut the broccoli into large bite-sized pieces to ensure even roasting and easy eating.
  3. Season Broccoli: Place the broccoli and garlic cloves on a large baking tray. Drizzle with olive oil and sprinkle with kosher salt and ground black pepper. Toss everything together well so the broccoli is evenly coated.
  4. Initial Roasting: Spread the broccoli and garlic in a single layer on the baking tray for even cooking. Roast in the oven for 7 minutes to start softening the broccoli.
  5. Add Almonds and Continue Roasting: After 7 minutes, add the sliced almonds to the tray and turn the broccoli to mix together. Roast for another 7 minutes until the almonds start to toast and broccoli softens more.
  6. Add Cranberries and Final Roast: Add the dried cranberries and toss them with the broccoli and almonds. Return the tray to the oven and roast for an additional 5 to 6 minutes until the broccoli is tender and almonds golden brown.
  7. Serve: Remove from the oven and serve immediately for the best flavor and texture.

Notes

  • Use fresh broccoli for the best texture and flavor.
  • You can substitute sliced almonds with slivered almonds if preferred.
  • Adjust seasoning with salt and pepper to taste before serving.
  • For extra flavor, try adding a squeeze of lemon juice after roasting.
  • This side dish pairs beautifully with roasted or grilled meats and fish.
