- Prepare the batter: In a large bowl, combine the grated courgettes, plain flour, beaten egg, and finely grated parmesan. Mix well until all the ingredients are evenly incorporated into a thick batter.
- Heat the pan: Place a non-stick frying pan over medium heat and add one tablespoon of olive oil, allowing it to warm up gently without smoking.
- Cook the fritters: Spoon dollops of the batter into the pan and gently flatten them with a spatula. Fry each fritter for 2 to 3 minutes on one side until golden brown, then carefully flip and cook the other side for another 2 to 3 minutes, ensuring they are cooked through and crispy on both sides.
- Serve immediately: Remove the cooked fritters from the pan and serve them piping hot alongside a generous helping of roasted red pepper hummus for dipping.
