Cod & Potatoes:
- 4 cod fillets (about 6 oz each)
- 2 medium potatoes, peeled and diced
- 1 tablespoon olive oil
- Salt and pepper, to taste
Rosemary Cream Sauce:
- 1 cup heavy cream
- 2 tablespoons butter
- 2 teaspoons fresh rosemary, chopped
- 1 clove garlic, minced
Instructions
- Cook the Potatoes: Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook until golden brown and tender, about 10–12 minutes. Remove and set aside.
- Make the Rosemary Cream Sauce: In the same skillet, melt butter. Add minced garlic and chopped rosemary, sauté for 1–2 minutes. Pour in heavy cream, simmer for 3–5 minutes until slightly thickened.
- Cook the Cod: Season cod fillets with salt and pepper. Place in the cream sauce, cook for 5–6 minutes until opaque and flakes easily.
- Serve: Plate cod fillets with sautéed potatoes, spoon rosemary cream sauce generously over the top.
