Cookies:
- 1 cup (227g) salted butter (softened)
- 3/4 cup (180ml) vegetable oil
- 1 1/4 cups (250g) granulated sugar (+ extra for tops of the cookies)
- 3/4 cup (90g) powdered sugar
- 2 teaspoons lime zest
- 2 Tablespoons lime juice
- 2 large eggs
- 1 1/2 Tablespoons pure vanilla extract
- 1 teaspoon coconut extract
- 5 1/2 cups (776g) all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon salt
Frosting:
- 1/2 cup (113g) salted butter (softened)
- 4 cups (480g) powdered sugar
- 2 teaspoons lime juice
- 2 teaspoons coconut extract
- 1 teaspoon pure vanilla extract
- 2–3 Tablespoons heavy cream
- Additional lime zest for decorating the tops of the cookies
Instructions
- Cookies Combine butter, oil, granulated sugar, and powdered sugar. Beat until creamy. Add lime juice, lime zest, eggs, vanilla, and coconut extract. Mix in flour, baking soda, cream of tartar, and salt. Roll into balls, flatten, and bake.
- Frosting Beat butter until creamy. Add half the powdered sugar, lime juice, coconut extract, vanilla, and cream. Mix, then add remaining sugar and cream. Beat until fluffy. Frost cooled cookies and sprinkle with lime zest.
Notes
- Chilling the cookies before serving enhances the flavors.
- Store cookies in an airtight container for up to 5 days.
