- Add chipotle paste: Stir in 1 tablespoon of chipotle paste for a mild flavor or 2 tablespoons for a stronger, hotter taste. Cook the mixture for 1 minute, allowing the smoky paste to infuse the aromatics.
- Simmer the sauce: Pour in the canned chopped tomatoes and cider vinegar. Bring to a simmer, then lower the heat and cook with the lid half on for 10 minutes. Stir occasionally to prevent the sauce from drying out and to blend the flavors.
- Cook the chicken: Add the skinless chicken thigh fillets to the pan, submerging them in the sauce. Cook for 10 minutes, turning once halfway through, until the chicken is cooked thoroughly and tender.
