Instructions
- Preheat oven: Preheat your oven to 375˚F to prepare for baking the casserole.
- Prepare vegetables: Chop the zucchini, yellow squash, and sweet onion into bite-sized pieces and combine them together in a bowl.
- Assemble casserole: In a large casserole dish, arrange the chicken breasts in a flat single layer. Season them evenly with salt, pepper, and garlic powder. Layer the chopped vegetables over the chicken. Dollop the pesto across the vegetables, then evenly sprinkle the parmesan and mozzarella cheeses on top.
- Bake the casserole: Place the casserole dish on the middle rack of the oven and bake for 35-45 minutes, until the chicken reaches an internal temperature of 165˚F and is fully cooked. If the cheese or top starts browning too quickly, loosely cover the dish with foil for the remainder of the baking time.
