  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced

  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil

  • 1 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 (14 ounce) package ramen noodles, flavor packet reserved
  • 1/4 cup chopped green onions, for garnish
  • Sesame seeds, for garnish (optional)

Instructions

  1. Prepare the chicken: Pat the chicken pieces dry with paper towels and season generously with salt and black pepper. Heat vegetable oil in a large wok or skillet over medium-high heat. Add the chicken pieces and cook, stirring occasionally, until browned and cooked through, about 6-8 minutes. Remove chicken from the pan and set aside.
  2. Sauté the vegetables: In the same wok or skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for 1 minute until fragrant. Then add the sliced red and green bell peppers and cook for an additional 2-3 minutes until slightly softened.
  3. Make the sauce: In a small bowl, whisk together the undrained diced tomatoes, chicken broth, soy sauce, honey, rice vinegar, sesame oil, grated ginger, and red pepper flakes (if using).
  4. Combine and simmer: Pour the sauce mixture into the wok with the cooked vegetables. Bring it to a simmer. Add the cooked chicken back into the wok. Break the ramen noodles into smaller pieces and add them to the wok, stirring to combine everything. Cook for 2-3 minutes until the noodles are tender and the sauce has thickened slightly.
  5. Season and garnish: Add about half of the ramen flavor packet, tasting and adjusting seasoning as preferred. Remove the wok from heat. Garnish the stir fry with chopped green onions and sesame seeds, if desired. Serve immediately.
