For the Curry
- 1 tbsp sunflower oil
- 1 onion, chopped
- 450g boneless, skinless chicken thighs, cut into bite-sized pieces
- 165g jar Korma paste
- 2 garlic cloves, crushed
- 500g sweet potatoes, cut into small chunks
- 400g can chopped tomatoes
- 100g baby spinach

Instructions
- Prepare the base: Heat the sunflower oil in a large pan over low heat. Add the chopped onion and cook gently for about 5 minutes until softened and translucent.
- Brown the chicken: Increase the heat slightly and add the chicken thigh pieces. Cook them until they are browned on all sides to develop flavor.
- Add curry paste and garlic: Stir in the korma paste and crushed garlic cloves, cooking and stirring for 2 minutes to release their aromas.
- Simmer vegetables and chicken: Pour in 100ml of water along with the chopped sweet potatoes and canned chopped tomatoes. Bring the mixture to a simmer.
- Cook thoroughly: Let the curry simmer gently for 20-30 minutes, uncovered, until the chicken is fully cooked and the sweet potatoes are tender. Add a splash more water if the curry becomes too dry during cooking.
- Finish with spinach: Season the curry to taste with salt and pepper, then remove the pan from heat. Stir in the baby spinach leaves until they wilt into the curry.
- Serve: Serve the chicken and sweet potato curry hot, accompanied by fluffy cooked basmati rice.
Notes
- You can substitute chicken thighs with chicken breast if preferred, but thighs tend to stay juicier and more flavorful.
- Adjust the amount of korma paste to your preferred spice level.
- For a creamier curry, add a splash of coconut milk during the simmering step.
- If you like your curry thicker, simmer uncovered until desired consistency is reached.
- Use fresh garlic instead of crushed garlic for a stronger garlic flavor.
