Omelette Mixture
- 1 tbsp olive or rapeseed oil
- 8 large eggs, beaten
- 200g frozen peas
- 85g mature cheddar, grated
Burger Assembly
- 4 large burger buns, toasted
- 4 tbsp onion chutney or chilli jam
- handful salad leaves (rocket used)
- slices of tomato (optional)
- sweet potato wedges (optional), to serve
Instructions
- Heat the Oil and Pan: Place a frying pan about 20cm wide on medium heat and add the olive or rapeseed oil, heating it up for a minute to prepare for cooking the eggs.
- Add Eggs and Peas: Season the beaten eggs with salt and pepper, then pour them into the pan along with the frozen peas. Quickly stir to distribute the peas evenly within the egg mixture.
- Cook Omelette Base: Reduce heat to low-medium and let the eggs cook undisturbed for about 8 minutes until the underside is set and just turning golden brown, ensuring a tender but firm base.
- Add Cheese and Grill: Sprinkle the grated mature cheddar evenly over the surface of the omelette. Transfer the pan under a preheated grill set to high and grill for 3 minutes, or until the cheese is bubbling and the top of the omelette is fully set.
- Prepare the Buns: While the omelette grills, toast the burger buns until golden. Spread each bun with 1 tbsp of onion chutney or chilli jam to add a burst of flavor.
- Assemble the Burgers: Cut the cheesy omelette into four equal wedges and place each wedge on the base of the toasted buns. Add a handful of fresh salad leaves and optional tomato slices, then top with the other half of the bun.
- Serve: Serve the cheesy omelette burgers hot, optionally accompanied by sweet potato wedges for a complete meal.
