Ingredients

  • 1 tbsp olive or rapeseed oil
  • 8 large eggs, beaten
  • 200g frozen peas
  • 85g mature cheddar, grated
  • 4 large burger buns, toasted
  • 4 tbsp onion chutney or chilli jam
  • Handful salad leaves (we used rocket), to serve
  • Slices of tomato (optional), to serve
  • Sweet potato wedges (optional), to serve

Instructions

  1. Step 1: Heat the oil in a frying pan about 20cm wide over medium heat. Season the beaten eggs, then pour them into the pan along with the frozen peas. Quickly stir to combine.
  2. Step 2: Reduce the heat to low-medium and cook the eggs undisturbed for about 8 minutes, until the underside is set and turning golden.
  3. Step 3: Scatter the grated cheddar evenly over the omelette. Place the pan under a hot grill for 3 minutes or until the cheese is bubbling and the surface is set.
  4. Step 4: While the omelette cooks, spread each toasted burger bun with a tablespoon of onion chutney or chilli jam.
  5. Step 5: Cut the omelette into 4 wedges. Assemble each burger by placing a wedge inside the bun, then top with a handful of salad leaves and tomato slices if using.
  6. Step 6: Serve immediately with sweet potato wedges on the side, if desired.

Tips & Variations

  • For extra flavor, add finely chopped herbs like chives or parsley to the egg mixture before cooking.
  • Swap mature cheddar for feta or mozzarella for a different cheese experience.
  • Use rocket or baby spinach for peppery salad leaves.
  • Try spicy chutney or a different type of jam for a unique twist.

Storage

Store any leftover omelette burgers wrapped tightly in the refrigerator for up to 24 hours. Reheat gently in a low oven or microwave to avoid overcooking the eggs. For best texture and flavor, it’s recommended to enjoy these burgers fresh.

How to Serve

A sandwich with a seeded top bun, speckled with black and white seeds, slightly lifted to show the layers inside. The bottom bun is white and soft, spread with a glossy, dark red sauce. On top of the sauce are fresh, bright red slices of tomato. Above the tomato is a thick slice of light yellow and white frittata packed with whole green peas, showing its soft but firm texture. A few fresh, dark green arugula leaves crown the frittata, adding a leafy texture. The sandwich sits on a white rounded wooden board, placed on a white marbled background. • Grilling time may vary depending on your grill; watch the cheese to avoid burning.
  • Use a non-stick 20cm frying pan for best results to prevent sticking.
  • To keep the burgers warm and melty, assemble just before serving.
