  2. Heat the Pan: Place a large non-stick frying pan over medium heat and allow it to become hot before adding the egg mixture.
  3. Cook the Eggs: Pour the egg mixture into the hot pan and, while continuously scraping the eggs from the bottom and sides of the pan, cook until softly scrambled. This should take about 5–10 minutes depending on your pan size. Aim to slightly undercook as the residual heat will continue cooking the eggs after removing from heat.
  4. Add the Chives: Once the eggs are softly set, stir in 1 tablespoon of fresh chopped chives and adjust salt to taste.
  5. Prepare Croissants: Slice each croissant in half lengthways. Optionally, warm the croissants in a moderate oven for a few minutes or enjoy them at room temperature.
  6. Assemble the Croissants: Spread butter on both croissant halves to taste, add a slice of ham on each bottom half, then spoon the scrambled eggs over the ham.
