Cauliflower Steaks
- 1 small cauliflower
- 3 tbsp olive oil
- 2 tbsp medium curry powder
- Salt, to taste
Tomato and Onion Salad
- 2 large tomatoes, finely chopped
- 1 red onion, finely chopped
- ½ bunch of coriander, finely chopped
- Pinch of salt
Curried Mayo
- 2 tbsp mayonnaise
- 3 tbsp Greek yogurt
- 2 tbsp curry paste
To Serve
- 4 burger buns
- 2 handfuls of bombay mix (optional)
Instructions
- Prepare Cauliflower Steaks: Preheat your oven to 200°C (180°C fan)/gas mark 6. Remove the leaves and base from the cauliflower and slice it into approximately 2cm-thick steaks. In a small bowl, mix the olive oil and medium curry powder to create a flavorful curry oil.
- Roast Cauliflower: Place the cauliflower steaks on a baking tray lined with foil. Generously brush each side of the steaks with the curry oil, then sprinkle with salt. Roast in the oven for 25-30 minutes or until the cauliflower is tender and cooked through.
- Make Tomato and Onion Salad: While the cauliflower roasts, combine the finely chopped tomatoes, red onion, coriander, and a pinch of salt in a bowl. Mix well and set aside to allow flavors to meld.
- Prepare Curried Mayo: In a separate bowl, mix together the mayonnaise, Greek yogurt, and curry paste until smooth and well combined.
- Toast Buns: Heat a dry frying pan and toast the burger buns cut-side down until golden and slightly crisp.
- Assemble Burgers: Spread a dollop of curried mayo on the base of each bun. Place a roasted cauliflower steak on top, followed by more curried mayo. Add a generous spoonful of the tomato and onion salad, and sprinkle with bombay mix for added crunch if desired. Finish with the bun tops and serve immediately.
Notes
- You can substitute the mayonnaise and Greek yogurt with vegan alternatives to make this recipe vegan.
- Bombay mix adds a nice crunchy texture but is optional.
- The curry paste and powder levels can be adjusted to taste for more or less spiciness.
- For a gluten-free version, use gluten-free buns.
