Ingredients
Scale
Meat and Cheese
- 2 cups shredded carnitas
- 8 oz shredded Colby Jack cheese or Mexican blend cheese
Base and Vegetables
- 12–14 oz tortilla chips
- 1/2 cup black beans
- 1/2 cup corn salsa (or plain corn)
Toppings
- Sour cream, for drizzling
- Pico de gallo, for topping
- Fresh jalapeno slices, to taste
- Guacamole, for serving
Instructions
- Preheat Oven: Set your oven to 400˚F (204˚C) and allow it to fully preheat to ensure proper melting and crisping during baking.
- Assemble Nachos: On a large shallow baking sheet, spread the tortilla chips evenly in a single layer. Sprinkle half of the shredded cheese over the chips. Evenly distribute the black beans, corn salsa, and shredded carnitas across the chips. Finish by sprinkling the remaining cheese on top to cover the toppings.
- Bake Nachos: Place the baking sheet on the lower rack of the preheated oven. Bake for 8 to 12 minutes, or until the cheese has fully melted, the carnitas become crispy, and the edges of the chips show light browning.
- Add Fresh Toppings: Remove the nachos from the oven carefully. Generously top with pico de gallo, a drizzle of sour cream, and fresh jalapeno slices according to your spice preference. Serve immediately with guacamole on the side for dipping or spreading.
Notes
- For extra crispiness, use a baking sheet with a mesh surface or elevate the chips slightly with a wire rack.
- Customize toppings by adding diced onions, olives, or jalapenos based on your preference.
- Use leftover carnitas or freshly prepared shredded pork for best flavor.
- To make corn salsa, mix fresh or canned corn with diced red onion, chopped cilantro, lime juice, and salt.
- Adjust jalapeno quantity to control the heat level to your taste.
