Instructions
- Marinate the Chicken: Chop the chicken into 1-inch chunks and place them in a zip-top bag. Add 1 tablespoon of olive oil and 2 tablespoons of Cajun seasoning. Seal the bag and mix until all chicken pieces are evenly coated. Set aside to marinate while you prepare the vegetables.
- Prepare the Vegetables: Chop both the red and green bell peppers into bite-sized pieces to be cooked with the chicken.
- Cook the Chicken and Peppers: Heat the remaining 1 tablespoon of olive oil in a large skillet over high heat until hot.
