- 2 tsp olive oil
- Juice of 1 lemon
Burger Assembly
- 4 bread rolls, cut in half
- 3 tbsp crème fraîche
- 2 hard-boiled eggs, sliced
- 1 Little Gem lettuce, chopped
- Punnet of salad cress, snipped
- 25g Parmesan, shaved
Instructions
- Prepare the chicken: Place the chicken breasts between two pieces of baking parchment and gently bash them with a rolling pin to flatten slightly. Remove the parchment and brush both sides of the chicken pieces with olive oil.
- Grill the chicken: Heat a griddle pan over high heat until it is smoking hot. Place the chicken on the griddle pan and cook for about 10 minutes, turning once halfway through, until the chicken is cooked through.
- Season the chicken: Transfer the cooked chicken to a plate, pour over some of the lemon juice, and season with salt and freshly ground black pepper to taste.
- Toast the rolls: Place the cut-side of the bread rolls onto the hot griddle pan and toast lightly until golden and crispy.
- Make the dressing: In a small bowl, mix the crème fraîche with the remaining lemon juice to create a tangy, creamy dressing.
- Assemble the burgers: On the toasted bread rolls, layer the grilled chicken pieces, sliced hard-boiled eggs, chopped Little Gem lettuce, a dollop of the lemon crème fraîche, salad cress, and finish with Parmesan shavings. Top with the other half of the roll and serve immediately.
