- 1/2 tsp salt (divided)
- 1/2 tsp black pepper (divided)

Instructions
- Preheat the oven: Set your oven to 375˚F (190˚C) and allow it to fully preheat while you prepare the ingredients.
- Prepare the tomato mixture: In a large bowl, combine chopped roma tomatoes, fresh chopped basil, and minced garlic. Toss these together with 2 tablespoons of balsamic vinegar, then season with half of the salt and pepper to evenly coat the mixture.
- Assemble the chicken: Place the chicken breasts flat in a single layer in a large baking dish. Season the chicken breasts with the remaining salt and pepper. Pour the tomato and basil mixture evenly over the chicken, spreading it with a spatula. Sprinkle shredded mozzarella cheese evenly over the top.
- Bake: Transfer the baking dish to the center rack of the preheated oven. Bake the chicken uncovered for 35-45 minutes, or until the internal temperature of the chicken reaches 165˚F (74˚C), ensuring it is fully cooked and tender.
