Description
These Brownie Protein Bites are a delicious, guilt-free treat that are gluten-free and paleo-friendly. Made with wholesome ingredients, these bites are perfect for a quick energy boost or a satisfying dessert.

Filling:
- 1 cup Medjool dates (about 13 dates)
- 1/3 cup sunflower seed butter
- 1 tsp vanilla extract
- 1/3 cup protein powder*
- 1/4 cup cocoa powder
- pinch of salt
Coating:
- 1/2 cup dark chocolate
- 1/2 tsp coconut oil
Instructions
- Soften Dates: Remove the pits from your dates and soak them in hot water for 5 minutes.
- Blend: Drain the water from the dates, then place them in your food processor with the sunflower seed butter and vanilla. Blend until the mixture looks like a thick, sticky caramel.
- Add Ingredients: Add in the remaining filling ingredients. Blend, stopping to scrape down the sides if needed.
- Form Balls: Scoop the dough for the filling and roll into balls, each about one tablespoon in size.
- Chill: You can eat the balls as-is, or chill them and then dip them in dark chocolate. To chill them, place the balls on a lined baking sheet and pop them in the freezer for at least 30 minutes.
- Melt Chocolate: Once the balls are chilled, melt the dark chocolate and coconut oil. Place the chocolate and coconut oil in a small microwavable dish and melt on high heat at 20-30 second intervals, stirring in-between.
- Dip Balls: Dip the balls, one at a time into the melted chocolate and place them back on the lined baking sheet to set.
(This softens them, making them easier to blend and giving the filling a chewier texture.)
Notes
- You can customize these bites by adding chopped nuts or shredded coconut to the filling mixture.
- Store the bites in an airtight container in the refrigerator for up to a week.
