For the Salad:

  • 1 1/2 medium heads broccoli (4 cups chopped small)
  • 1 cup pearl couscous
  • 1/2 cup dried cranberries
  • 100g/ 3 oz salami, chopped into small pieces
  • 1/3 cup almonds, chopped
  • 1 red onion, finely sliced
  • 2 garlic cloves, minced

For the Dressing:

  • 1 tbsp red wine vinegar
  • 2 tbsp red wine vinegar
  • 1 tbsp honey
  • 3 tbsp extra virgin olive oil
  • 1 tsp dijon mustard
  • 1 garlic clove, minced
  • 1 tsp lemon zest (optional)
  • 1/4 tsp cooking salt / kosher salt
  • 1/8 tsp black pepper
  • 1/4 cup+ parmesan, grated

Instructions

  1. Dressing: Shake all dressing ingredients in a jar.
  2. Chop broccoli: Cut broccoli into small, spoon-sized pieces.
  3. Marinate broccoli: Toss broccoli with vinegar, salt, and 2 tbsp of dressing. Let sit for 30 minutes.
  4. Cook couscous: Boil water, cook couscous for 5 minutes, adding cranberries at the end. Toss with 2 tbsp of dressing and let cool.
  5. Sauté salami: Cook salami, almonds, onion, and garlic in olive oil until golden. Combine with broccoli and let cool.
  6. Combine: Mix couscous, remaining dressing, and broccoli mixture. Sprinkle with parmesan before serving.

Notes

  • For a vegetarian option, you can substitute the salami with bacon or omit it entirely.
  • You can substitute maple syrup or sugar for honey in the dressing.
  • If using feta instead of parmesan, crumbled feta adds a delicious flavor to the salad.
