Ingredients
Scale
Lobster Mixture
- 2–4 oz. cooked lobster tails (or 1 8-oz. lobster tail)
- 2 Tbsp. mayonnaise
- 2 tsp. lemon juice
- 2 tsp. lemon zest
- 2 tsp. fresh chives, chopped
- Freshly cracked black pepper, to taste
Bread & Cheese
- 4 slices sourdough bread or French boule
- 5 oz. Havarti cheese, freshly shredded (about 1¾ cups)
- 1 Tbsp. butter
Instructions
- Prepare Lobster: If the lobster tail is not cooked, cook it first by your preferred method (air fryer instructions can be followed if desired). Remove the meat from the shell and roughly chop, keeping the chunks fairly large to maintain texture.
- Make Mayonnaise Mixture: In a small bowl, combine the mayonnaise, lemon juice, lemon zest, freshly chopped chives, and freshly cracked black pepper. Mix well to create a flavorful spread.
- Heat Skillet: Preheat a griddle or heavy skillet over medium heat to ensure even cooking of the sandwiches.
- Prepare Bread: Spread one side of each bread slice with a thin layer of butter. Spread the opposite side of each slice with the prepared mayonnaise mixture. This layering adds moisture and flavor.
- Assemble Sandwiches: Place two bread slices on the griddle, butter side down. Sprinkle half of the shredded Havarti cheese evenly on top. Distribute the chopped lobster meat evenly over the cheese layer, then top with the remaining cheese. Finally, place the other two slices of bread on top, butter side up.
- Grill the Sandwiches: Cook the sandwiches for about 4-5 minutes until the bread is a crisp golden brown. Carefully flip and cook another 3-4 minutes until the cheese has melted completely and the other side of the bread is golden and crisp.
Notes
- Use freshly shredded Havarti cheese for better melting and texture compared to pre-shredded.
- If using raw lobster tails, ensure they are fully cooked before starting the recipe.
- Adjust lemon juice and zest to taste for more or less citrus zing.
- Serve immediately while warm for best flavor and texture.
- Can be paired with a light salad or tomato soup for a complete meal.
