  • ½ cup mayonnaise
  • ½ cup sour cream
  • 2 tsp Worcestershire sauce
  • 2 tsp Dijon mustard
  • 1 tsp paprika
  • 1 clove garlic, minced

Burgers

  • 1 lb 85% lean ground beef
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 Tbsp oil
  • 3 Tbsp butter, divided

Mushrooms & Onions

  • 8 oz cremini mushrooms, sliced
  • 1 yellow onion, sliced
  • Salt, to taste
  • Pepper, to taste

Buns & Garnish

  • 4 Kaiser rolls
  • Several leaves of lettuce, for serving

Instructions

  1. Prepare Sauce: In a medium bowl, mix together the mayonnaise, sour cream, Worcestershire sauce, Dijon mustard, paprika, and minced garlic. Season lightly with salt and pepper. Set aside to allow flavors to meld.
  2. Season Beef: Place the ground beef in a large bowl and season with salt and pepper. Mix gently to combine without overworking the meat to maintain tenderness.
  3. Form Patties: Divide the beef into 4 equal portions. Shape each into a tight ball, then flatten into a disc shape, making the center slightly thinner than the edges to ensure even cooking. Set aside.
  4. Sauté Mushrooms and Onions: Heat oil and 1 tablespoon of butter in a medium skillet over medium heat. Add the sliced mushrooms and onions. Cook, stirring occasionally, until softened and lightly browned, about 5-8 minutes. Season with salt and pepper, then remove from heat but keep in skillet.
  5. Cook Burgers: Preheat a large skillet over medium heat. Add the beef patties and cook undisturbed for 3-4 minutes until deeply seared on one side. Flip and continue cooking for another 4-6 minutes until patties reach an internal temperature of 160°F (71°C). Remove burgers and let them rest on a plate.
  6. Heat Mushrooms & Onions: Place the skillet with mushrooms and onions back on low heat briefly to warm through.
  7. Toast Buns: Slice Kaiser rolls in half. Return large skillet to medium heat and melt remaining 2 tablespoons of butter. Place buns cut-side down in the pan and toast for about 1 minute until golden. Remove from heat.
  8. Assemble Burgers: Spread the prepared mayonnaise sauce generously on the inside of each bun half. Layer lettuce on the bottom bun, top with a cooked burger patty, then pile on the warm mushrooms and onions. Cover with the top half of the bun and serve immediately.

  • Use 85% lean ground beef for the best balance of juiciness and flavor.
  • Do not overmix the beef to keep the patties tender and juicy.
  • Make sure to rest the burgers after cooking to retain juices.
  • You can substitute sour cream with Greek yogurt for a lighter sauce.
