Scale
Fish and Coating
- 1 tbsp olive oil
- 2 tbsp plain flour
- Salt and pepper, to season
- 2 basa fillets (250g total)
Garlic, Spring Onion & Paprika Butter
- 50g salted butter
- 3 spring onions, finely sliced
- 2 garlic cloves, grated
- 1 tsp smoked sweet paprika
- Salt and black pepper, to season
To Serve
- Cooked rice or potatoes
- Vegetables
Instructions
- Prepare the Fish: Pour the olive oil into a frying pan and heat it over medium heat. On a plate, combine the plain flour with salt and pepper. Season the basa fillets and coat them lightly in the flour mixture, shaking off any excess flour.
- Cook the Basa Fillets: Once the oil is hot, add the coated basa fillets to the pan. Cook for 2-3 minutes on each side until the fish is lightly golden and flakes easily when pressed with a fork. Remove the fillets and drain on kitchen paper to remove excess oil.
- Make the Garlic, Spring Onion & Paprika Butter: In the same pan, melt the butter over medium heat. When it starts to foam, add the finely sliced spring onions and grated garlic along with a small pinch of salt and a few twists of black pepper. Cook for 1-2 minutes until the onions soften.
- Add the Paprika: Sprinkle in the smoked sweet paprika and toast it for 30 seconds, stirring continuously to blend all the flavors together.
- Serve: Pour the aromatic butter sauce over the basa fillets and serve immediately with your choice of cooked rice or potatoes along with vegetables.
Notes
- Ensure the oil is hot before adding the fish to achieve a nice golden crust.
- Do not overcrowd the pan; cook in batches if necessary for even cooking.
- Use fresh garlic and spring onions for the best flavor infusion.
- The paprika butter sauce can also be drizzled over other white fish varieties.
- Serve with a fresh salad or steamed vegetables for a balanced meal.
