Sausages and Gravy

  • 1/2 tbsp oil
  • 8 sausages of choice
  • 1 large onion, halved and finely sliced (yellow, white or brown)
  • 2 garlic cloves, minced
  • 3 tbsp plain flour
  • 2 cups beef stock/broth
  • 1/4 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Cook sausages: Heat 1/2 tbsp oil in a large skillet or frying pan over medium-high heat. Add the sausages and cook them, turning frequently, until they are nicely browned on all sides and cooked through, about 8 minutes depending on the size of your sausages.
  2. Remove sausages: Transfer the cooked sausages onto a plate and reduce the heat to medium.
  3. Ensure sufficient oil: Make sure there is approximately 2 tbsp of oil or fat left in the skillet. If the amount is less, add a bit of butter or oil to reach this quantity for sautéing the onions and garlic.
  4. Sauté onion and garlic: Add the sliced onion and minced garlic to the skillet. Cook, stirring occasionally, until the onions are golden brown and soft, about 4 minutes.
  5. Cook flour: Stir in the plain flour and cook, stirring constantly, for 2 minutes to eliminate the raw flour taste and begin forming the gravy base.
  6. Add beef stock gradually: Pour in about 3/4 cup of the beef stock, stirring continuously until the mixture forms a thick sludge. Then add the remaining beef stock and mix well. Use a whisk if needed to smooth out any lumps.
  7. Thicken gravy: Let the gravy simmer while stirring frequently for 2 to 3 minutes until it thickens but is still slightly thinner than desired as it will thicken further when served.
  8. Season gravy: Add salt and black pepper, stir well, taste, and adjust seasoning as preferred.
  9. Serve: Plate the sausages and generously spoon the onion gravy over them. Serve alongside creamy mashed potatoes and peas. For a low-carb variation, substitute mashed potatoes with creamy cauliflower mash.

  • Note 1: Choose sausages according to preference, pork sausages are traditional but beef, chicken, or plant-based alternatives work well.
  • Note 2: Yellow, white, or brown onions can be used depending on what you have available; yellow onions provide sweetness, white are sharp, and brown have a robust flavor.
  • Leftover gravy can be stored in the fridge for up to 3 days and reheated gently on the stovetop.
