Ingredients

Rice

  • Day-old jasmine rice, 3 cups

Protein

  • Beef, thinly sliced, 8 oz (or chicken, shrimp, or tofu as alternatives)

Vegetables

  • Peas, 1/2 cup
  • Carrots, diced, 1/2 cup
  • Bell peppers, diced, 1/2 cup
  • Broccoli florets (optional), 1/2 cup
  • Snow peas (optional), 1/2 cup
  • Corn kernels (optional), 1/2 cup

Bang Bang Sauce

  • Mayonnaise, 1/4 cup
  • Sweet chili sauce, 2 tablespoons
  • Sriracha, to taste (about 1 teaspoon recommended)

Oils & Garnish

  • Vegetable oil or neutral oil, 2 tablespoons (divided: 1 tablespoon for sautéing beef, 1 tablespoon for frying vegetables and rice)
  • Chopped green onions, 2 tablespoons (for garnish)

Instructions

  1. Prepare the Rice: If using freshly cooked jasmine rice, spread it out evenly on a baking sheet and allow it to cool for about 30 minutes. This step helps the rice dry out slightly, preventing it from becoming mushy when fried.
  2. Make the Bang Bang Sauce: In a small bowl, combine 1/4 cup mayonnaise and 2 tablespoons sweet chili sauce. Stir until smooth and well blended. Add sriracha according to your desired spice level, mixing thoroughly to incorporate.
  3. Sauté the Protein: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Once hot, add the sliced beef. Cook, stirring occasionally, until browned and cooked through, approximately 4 to 5 minutes. Remove the beef from the pan and set aside.
  4. Cook the Vegetables: Using the same skillet, add another tablespoon of oil if needed. Toss in peas, carrots, bell peppers, and any optional vegetables like broccoli, snow peas, or corn. Stir-fry the veggies for 3 to 4 minutes until they are tender yet still crisp.
  5. Add the Rice: Push the cooked vegetables to one side of the pan. Add a small splash of oil if the pan is dry. Add the day-old rice to the empty side and break up any clumps with a spatula. Stir and combine the rice and vegetables, allowing the rice to fry for about 2 to 3 minutes.
  6. Combine Everything: Return the cooked beef to the pan with the rice and vegetables. Pour the prepared Bang Bang sauce over the mixture. Stir well to ensure everything is evenly coated. Continue cooking for another 2 to 3 minutes to allow the flavors to meld and the dish to heat through completely.
  7. Garnish and Serve: Remove the skillet from heat. Serve the Bang Bang Fried Rice hot, garnished with chopped green onions. Optionally, offer extra Bang Bang sauce on the side for additional flavor.

Notes

  • Using day-old rice is key to achieving the ideal fried rice texture as it prevents clumping and sogginess.
  • You can substitute the protein with chicken, shrimp, or tofu to suit dietary preferences.
  • Adjust the amount of sriracha to control the spice level of the Bang Bang sauce.
  • Feel free to customize the vegetable mix based on availability and preference.
  • For a lower-fat version, use light mayonnaise or Greek yogurt in the Bang Bang sauce.
  • Make sure to keep the heat high during stir-frying to get a nice sear and avoid steaming the ingredients.
