Apple Filling

  • 2 medium-large Bramley apples, peeled, cored and roughly chopped
  • 50g golden caster sugar
  • ½ tsp ground cinnamon
  • 1 tbsp butter
  • 1 Gala or sweet dessert apple, peeled, cored and cut into 1cm dice

Puff Pastry and Topping

  • 320g pack Jus-Rol™ Puff Pastry Sheet
  • 2 tbsp milk (for glazing)
  • 2 tsp demerara sugar (for sprinkling)

Instructions

  1. Prepare the Bramley Apple Compote: Place the Bramley apples, golden caster sugar, and ground cinnamon in a small pan with 1 tablespoon of water. Cover and simmer gently over low heat for 10-15 minutes, stirring occasionally, until the apples break down and form a soft compote.
  2. Add Gala Apples and Butter: Stir in the butter and diced Gala apples into the compote. Continue cooking uncovered for an additional 5 minutes until the Gala apples soften slightly but keep their shape and the mixture thickens as excess moisture evaporates. Remove from heat and let cool completely.
  3. Prepare the Puff Pastry: Preheat your oven to 220°C (200°C fan)/gas mark 7. Roll out the puff pastry sheet on a clean work surface and cut into four even rectangles.
  4. Assemble the Turnovers: Spoon the apple filling onto one side of each rectangle, leaving a 1cm border around the edges. Brush the border with milk, then fold the pastry over to encase the filling. Press and crimp the edges together to seal well. Brush the tops of the turnovers with more milk and sprinkle with demerara sugar. Cut a small steam hole in the center of each turnover to let steam escape during baking.
  5. Bake the Turnovers: Transfer the turnovers onto a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed up and golden brown.
  6. Cool and Serve: Allow the turnovers to cool for about 10 minutes on a wire rack to let the filling set slightly, as it will be molten hot initially. Serve warm with vanilla ice cream or enjoy at room temperature. Store leftovers in an airtight container for up to 2 days.
