- 1 cup (240g) Greek yogurt
- ¾ cup (150g) packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract

- 1 ½ cups peeled and diced apples (about 2 medium apples)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Mix dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt.
- Combine wet ingredients: In another bowl, combine the Greek yogurt, brown sugar, eggs, and vanilla extract, whisking until smooth.
- Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and gently fold them together. Then, fold in the diced apples.
- Fill muffin tin: Scoop the batter into a muffin tin, filling each cup about ¾ full.
- Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick comes out clean.
- Cool: Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
