Sausage and Vegetables
- 4–6 vegetarian sausages
- 1 red onion, chopped
- 1 tbsp vegetable or olive oil
Sauce and Beans
- 400g can chopped tomatoes
- 3 roasted red peppers from a jar, sliced
- 400g can borlotti or cannellini beans, drained and rinsed
- 1 tsp red wine vinegar
- Dash Worcestershire sauce (or vegetarian alternative)
- 1 tsp mixed dried herbs
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat the air fryer: Set the air fryer to 180°C (356°F) to prepare for cooking the sausages and onion.
- Cook sausages: Place the vegetarian sausages in the air fryer basket and cook for 5 minutes to start browning and cooking through.
- Prepare onion: Toss the chopped red onion in the vegetable or olive oil until evenly coated.
- Add onion to air fryer: Add the coated onion to the air fryer basket with the sausages, and cook for an additional 5 minutes, allowing the onions to soften and the sausages to cook further.
- Combine casserole ingredients: In a heatproof dish suitable for your air fryer, or directly in the air fryer drawer (if your model allows), combine the browned sausages, cooked onions, chopped tomatoes, sliced roasted red peppers, drained beans, red wine vinegar, Worcestershire sauce or vegetarian alternative, mixed dried herbs, salt, and pepper.
- Cook casserole: Place the dish or drawer back in the air fryer and cook for 20 minutes at 180°C. This will cook the sausages through completely and allow the sauce to thicken slightly.
- Serve: Remove from the air fryer, season with freshly ground black pepper, and serve hot for a nourishing, flavorful meal.
