Bell Peppers:

  • 6 large bell peppers

Stuffing:

  • 3 tablespoons olive oil
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 14 ounces ground beef
  • 1 3/4 cups cooked rice
  • 14 ounces canned tomatoes (diced)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • 1 1/4 cups mozzarella cheese (shredded)

Instructions

  1. Preheat the Air Fryer: Preheat the air fryer to 190C/375F.
  2. Prepare Peppers: Cut off the tops from peppers, clean the insides, and set aside.
  3. Cook Filling: In a skillet, saute onions and garlic, then add ground beef, rice, seasonings, and tomatoes. Cook until boiling.
  4. Fill Peppers: Scoop the mixture into the peppers, filling them to the top.
  5. Air Fry: Place the filled peppers in the air fryer basket and air fry for 15 minutes. Add shredded cheese and air fry for another two minutes until melted.
